Breakfast Gratin

Thinly slice 2 large potatoes and one medium onion.

Place greaseproof paper discs in the bottom of 4 buttered ramekins.

Place a layer of potato on the bottom followed by a layer of onion, 2 basil leaves, a teaspoon of bacon lardons and a teaspoon of grated cheese then a layer of potato, and a layer of onion layer of potato.

Pur over a teaspoon of cream then cover with a final layer of potat and add some butter on the very top to help the potato crisp.

Place in a hot oven (around 200 celsius) for 30 minutes.

carefull tip out of the ramekin and serve with a slice of brown toast and poached eggs.
