What can I say, nothing beats a full breakfast and here’s our version:

Bacon, Links, Square Sausage, Hash Browns, Potato Scones, Black Pudding and Scrambled Eggs.

Bacon & Egg Tartlets

These are super easy breakfast tarts. This recipe is enough for 12 tarks, 3 each for four of us.

Cut the crusts of 12 slices of bread and lightly butter both sides. Squash each slice into a bun tin.

Place in a hot oven for 10 minutes until the break starts to crisp.

Meanwhile, fry 150g of bacon lardons until they are nicely browned.

Take the bread cases out of the oven and divide the lardons between each case. Add half a teaspoon of sweetcorn and a good sprinkling of grated cheese to each.

Whisk 8 eggs together and pur the egg into each case.

Return to the oven and cook for 20 minutes until the egg fluffs up.

Remove from the bun tin and serve straight away accompanied by fresh juice and hot coffee.

Eggs Florentine

Warm Aberdeen Butter Cakes in the oven while making Hollandaise Sauce (we use a packet to which we add 300ml of milk – no shame in making things easier).

Spread Philadelphia cheese on the butter cakes they layer on 2 basil leaves and a handful of spinach leaves.

Poach two eggs (we use Poaching Pods from Lakeland – they are amazing) and pour over the Hollandaise. Enjoy!

Breakfast Gratin

Thinly slice 2 large potatoes and one medium onion.

Place greaseproof paper discs in the bottom of 4 buttered ramekins.

Place a layer of potato on the bottom followed by a layer of onion, 2 basil leaves, a teaspoon of bacon lardons and a teaspoon of grated cheese then a layer of potato, and a layer of onion layer of potato.

Pur over a teaspoon of cream then cover with a final layer of potat and add some butter on the very top to help the potato crisp.

Place in a hot oven (around 200 celsius) for 30 minutes.

carefull tip out of the ramekin and serve with a slice of brown toast and poached eggs.
